Tags and categories are how fans find you when they are not already looking for you. A post with neither is only visible to people who already follow you.

Adding them
When you upload a photo or video, choose a category and add tags before you publish. Both come from approved lists, so you are selecting rather than typing your own.
Choosing well
Tag what the post actually is. Tagging things that are not in it puts you in front of people looking for something else, who then do not subscribe, and it is the kind of thing that gets reported.
More tags is not automatically better. Accurate tags reach a smaller number of people who are more likely to stay, which is worth more than volume.
If a post genuinely fits several categories, pick the one a fan would most likely browse to find it.

+The category I need does not exist.
Tell us which one you want. Categories are added where there is enough demand, so it is worth asking rather than assuming.
+Can I make my own tags?
No. Tags come from an approved list, which is what keeps search working rather than filling with variations of the same word. If you feel like we're missing some, please let us know!
+Can I change tags after posting?
Check the post's edit options. Get in touch if something needs changing and you cannot do it yourself.
+Does tagging affect approval?
Tags that do not match the content can slow a post down, since it looks like something it is not. Accurate tagging is the faster route through.
